RECIPE

-salted chocolate chip oatmeal cookies-
So I made these cookies a couple of weeks ago, talked about how easy to make and delicious they were, and posted them like a jerk on instagram without a freakin’ recipe. I will get my act together one of these days and post recipes with all food photos. #newyearsresolution

Makes 24

1/2 cup vegan butter spread (i used earth balance)
1/2 cup light brown sugar
1/2 cup sugar
1 tbs ground flaxseed combined with 3 tbs water
1 tsp vanilla 
1 cup gluten free flour 
1/2 tsp baking soda
1/2 tsp sea salt flakes, plus more for top
1 1/2 cup gluten free rolled oats (not quick oats)
1/8 cup unsweetened almond milk
1 cup chocolate chips (vegan chips)

– preheat oven to 350 degrees
– make flax “egg”, combine water and flaxseed and let sit for 5 minutes
– in large bowl mix butter and sugars until creamy
– add flax egg, vanilla and almond milk
– mix flour, baking soda and salt in a bowl, add to butter and sugar mix
– stir in oats and chocolate chips
– roll in 1 1/2 inch balls, place on non-stick cookie sheet (or parchment paper)
– sprinkle sea salt on top
– bake for 15 minutes, or until lightly golden brown on top
