BREAKFAST MUFFINS

Sometime you wake up and you just wanna bake. I came across this recipe for breakfast muffins and was intrigued. First and foremost because it yielded 2 large muffins. I hate nothing more than math, and trying to cut recipes in half sucks. It just does. I’m also not a lover of wanting 2 cookies and having to make 864. In a typical sized muffin pan, this recipe made 5 smaller muffins. Acceptable. The recipe is sans butter, flour and sugar and tastes amazing. It’s full of bananas, blueberries, flaxseed, coconut oil, oats, almonds, cinnamon, agave . . . basically, all good stuff. I adapted the recipe from here. Homemade muffins, lattes and scrambled eggs and I was the breakfast hero this am. At least to my husband. 
substitutions:
– agave for honey
– almonds for walnuts
– i used whole oats, didn’t blend in the food processor, because i did’t feel like getting the food processor out. 
that’s the only reason why.

    These look delicious and much healthier than what I ate for breakfast (which did have a vegetable, pumpkin, but also many chocolate chips 🙂
